Serves 6-8
Ingredients
- 240g (8oz) halloumi cheese (roughly grated)
- 1/2 red onion (finely diced)
- 1 large red chilli (finely diced)
- 3 garlic cloves (finely chopped)
- 1 small bunch mint (finely chopped)
- Grated rind of 1 lemon
- 2 courgettes (roughly grated)
- 3 eggs (beaten)
- 100g - 150g fresh white breadcrumbs
- 2 tbl spns plain flour (for coating)
- light cooking oil
To serve
- Harissa
- Lemon wedges
Method
- Prepare all ingredients as above
- Mix together the halloumi, onion, chilli, garlic, mint and lemon rind
- Wrap the grated courgettes in a clean tea towel and squeeze out as much water as possible, then add to the mix
- Fold in the eggs and breadcrumbs, mix together, cover with cling film and leave in fridge for 10 mins (minimum)
- Using hands, shape the mixture into egg-sized patties, adding more breadcrumbs if the mix is very sticky
- Toss patties lightly in plain flour
- Fry in light oil over a medium heat (2 - 3 mins each) until golden brown
- Serve with Harissa and lemon wedges
