Cake
Times 3 for birthday cake size.
Grease and flour a 7” tin, not loose bottom
Sift together:
- 3.5 Oz SR flour
- 4oz caster sugar
- Quarter tsp salt
- 1 tablespoon cocoa
- Quarter to half tsp baking powder
Rub in:
- 2oz butter or margarine
Stir in:
- 1 beaten egg mixed with
- 2.5 tablespoon evaporated milk
- 2.5 tablespoon water
- 0.5 tsp vanilla essence
Beat well.
Bake for 35min or until starts to smell cakey and cake tester comes out clean.
NB This makes one seven inch cake! Not a birthday cake size!
Chocolate Fudge Icing
- 1.5 oz butter
- 1 oz cocoa, sieved, 2 tablespoon equivalent
- 1.5 ish tablespoon evaporated milk
- 4 oz icing sugar
- 0.5 tsp vanilla essence
Melt butter, add cocoa, cook over low heat for a minute. Remove from heat, add evaporated milk and icing sugar. Mix thoroughly, spread over cake.
Enough for top of birthday cake size
